  • 3 cups oats
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree Can be substituted with sweet potato puree.
  • 1 teaspoon pumpkin spice Can substitute with other spices like cinnamon or nutmeg.

Preparation

  • In a mixing bowl, combine peanut butter, honey, pumpkin puree, and vanilla extract until smooth.
  • Stir in oats and pumpkin spice until well combined.
  • Line a baking sheet with parchment paper.
  • Drop spoonfuls of the mixture onto the baking sheet.
  • Refrigerate for at least 1 hour until set.
  • Enjoy your no-bake cookies!

Notes

These cookies are delicious on their own, but can be served with whipped cream or dark chocolate. Store in an airtight container in the refrigerator for up to a week.
