- In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, powdered sugar, and salt.
- Mix thoroughly until all ingredients are well incorporated and form a sticky dough.
- Using your hands, shape the mixture into small balls about 1 inch in diameter.
- Roll each ball in extra shredded coconut to coat evenly.
- Place the coconut balls on a parchment-lined tray and refrigerate for at least 2 hours to firm up before serving.
Notes
Serve them as is or pair with fresh fruit, a coconut yogurt dip, or drizzle with dark chocolate for added decadence. Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
