Preparation
- In a large bowl, beat the softened cream cheese until it becomes smooth and creamy.
- Add the powdered sugar, graham cracker crumbs, vanilla extract, and a pinch of salt. Mix everything together until fully combined.
- Roll the mixture into small bite-sized balls and place them on a baking sheet lined with parchment paper.
- Freeze the balls for about 30 minutes or until they are firm.
Coating
- In a microwave-safe bowl, melt the white chocolate or almond bark, stirring every 30 seconds until smooth.
- Dip each cheesecake ball into the melted white chocolate, letting any excess drip off, then place them back on the lined baking sheet.
- Before the coating sets, dip half of each ball into melted red or green candy melts and finish with a sprinkle of holiday sprinkles.
- Refrigerate the bites until the coating is completely set, which will take about 1 hour.
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for up to three months.
