  • 1 cup butterscotch chips
  • 2 cups chow mein noodles Regular or egg noodles can be used.
  • 1 cup peanuts (optional) Can add crunch.
  • 1 cup mini marshmallows (optional) Add for extra sweetness.

Method
 

Preparation
  1. Melt butterscotch chips in a microwave-safe bowl, heating in 30-second intervals until smooth.
  2. In a large bowl, combine the melted butterscotch with chow mein noodles, and mix until well coated.
  3. If desired, fold in peanuts and mini marshmallows.
  4. Drop spoonfuls of the mixture onto wax paper and let them cool until set.

Notes

Store in an airtight container in the refrigerator for about a week. For longer storage, freeze them in a single layer and then transfer to a zip-top bag.
