New Zealand Fish and Chips

Ingredients
  

For the fish

  • 4 pieces white fish fillets (hoki, cod, etc.) Use fresh fish for the best flavor.
  • 1 cup flour
  • 1 tsp baking powder
  • 1 cup sparkling water
  • Salt and Pepper Add to taste.

For the fries

  • Potatoes to taste cut into fries

Instructions
 

Preparation

  • In a bowl, mix the flour, baking powder, and a pinch of salt and pepper.
  • Slowly add the sparkling water and stir until you have a smooth batter.

Cooking

  • Heat the oil in a deep pan.
  • Dip the fish fillets into the batter, coating them well.
  • Carefully place the fish into the hot oil and fry until golden brown, about 5-7 minutes.
  • While the fish is cooking, fry the potato fries in the same hot oil until crispy and golden, about 4-6 minutes.

Serving

  • Once everything is cooked, take the fish and fries out of the oil and place them on paper towels to soak up excess oil.
  • Serve hot with a wedge of lemon and optional homemade tartar sauce for dipping.

Notes

If you have leftovers, store the fish and fries in an airtight container in the refrigerator for 1-2 days. Reheat in the oven for a few minutes to regain crispiness.
