Preparation

  • Peel and chop the ginger into thin slices.

Cooking

  • In a medium saucepan, combine the ginger slices and water. Bring to a boil over medium-high heat.
  • Once boiling, reduce heat to low and let it simmer for about 20-30 minutes.
  • Strain the mixture through a fine mesh sieve or cheesecloth into a bowl, discarding the ginger pieces.
  • Stir in honey and lemon juice while the mixture is still warm.

Storage

  • Allow the syrup to cool completely, then transfer it to a clean glass jar.
  • Store it in the refrigerator for up to two weeks.
