Wet Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chopped fresh apples

For Serving

  • 1 cup caramel sauce for topping

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.
  • In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In a large bowl, combine granulated sugar, brown sugar, and oil.
  • Beat in eggs one at a time, then stir in the vanilla.
  • Gradually mix in the dry ingredients until just combined, then fold in the chopped apples.

Baking

  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool before drizzling with caramel sauce.

Serving

  • Slice and serve the cake warm or at room temperature.
  • It pairs wonderfully with a scoop of vanilla ice cream or whipped cream.

Notes

Store in the refrigerator for up to five days in an airtight container. This cake freezes well; wrap slices in plastic wrap and store in a freezer-safe bag.
