Ingredients
  

Brownie Base

  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 cup chocolate chips Use high-quality for richer flavor

Mint Layer

  • 1 cup heavy cream
  • 1/2 teaspoon peppermint extract Adjust to taste
  • Green food coloring (optional)

Ganache

  • 1 cup heavy cream Heat until simmering
  • 1 cup chocolate chips

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  • In a large bowl, melt butter and mix in sugar until well combined.
  • Add eggs, one at a time, mixing well after each addition.
  • Stir in flour, cocoa powder, and salt, mixing until just combined.
  • Fold in chocolate chips and spread the batter evenly into the prepared pan.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool.

Mint Filling

  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Gradually add in peppermint extract and a few drops of green food coloring if using.
  • Spread the mint filling over the cooled brownies.

Ganache

  • Heat heavy cream in a saucepan until it begins to simmer, then pour over chocolate chips in a bowl.
  • Let sit for a few minutes, then stir until smooth.
  • Pour ganache over the mint layer and spread evenly.
  • Chill in the fridge for at least 1 hour before cutting into squares and serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen in individual squares. Allow to thaw in the fridge before serving.
