For the crust
  • 1 package mini phyllo cups or graham cracker crusts

Preparation
  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until well blended.
  3. Fold in the chopped pecans and whipped cream gently.
  4. Spoon the cheesecake mixture into the mini phyllo cups or graham cracker crusts.
  5. Garnish with additional chopped pecans if desired.
  6. Refrigerate for at least 1 hour before serving.
