  • 2 cans Mexicorn
  • 1 can Rotel (regular or hot)
  • 2 cups shredded cheddar cheese
  • 8 pieces green onions (sliced)
  • 1 cup mayo
  • 8 oz sour cream
  • 1 bunch cilantro chopped

Instructions
 

Preparation

  • In a large mixing bowl, combine the Mexicorn, Rotel, shredded cheddar, sliced green onions, mayo, sour cream, and chopped cilantro.
  • Mix well until all ingredients are evenly combined.
  • Chill in the refrigerator for at least 30 minutes before serving.

Serving

  • Serve with tortilla chips or crackers.

Notes

Store leftovers in an airtight container in the fridge for about 3 to 5 days. You can also freeze it, although the texture may change after thawing. For extra flavor, try adding diced jalapeƱos or using fresh herbs. Prepare it a day in advance for better flavor blending.
