  • 2 cans cans Mexicorn
  • 1 can can Rotel (regular or hot)
  • 2 cups cups shredded cheddar cheese
  • 8 green onions (sliced)
  • 1 cup cup mayonnaise
  • 8 oz oz sour cream
  • 1 bunch bunch of cilantro

Instructions
 

Preparation

  • In a large mixing bowl, combine the Mexicorn, Rotel, shredded cheddar, sliced green onions, mayonnaise, sour cream, and chopped cilantro.
  • Stir until all ingredients are well mixed.
  • Refrigerate for at least an hour to allow the flavors to meld.
  • Serve chilled with tortilla chips or as a side dish.

Notes

Store Mexicorn Dip in an airtight container in the refrigerator for up to 3 days. Optional: For extra flavor, add diced jalapeƱos. Use Greek yogurt for a lighter version. Customize with black beans or different cheeses.
