  • 1 bag Nacho Doritos, crushed
  • 2 cups shredded chicken or ground beef You can use rotisserie chicken for a quicker prep time.
  • 2 cups shredded cheese Experiment with different types of cheese for unique flavor combinations.
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can Rotel tomatoes, undrained
  • 1/2 cup sour cream You can substitute cottage cheese for added protein.
  • 1/2 cup milk

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the crushed Doritos, shredded chicken (or ground beef), shredded cheese, cream of chicken soup, undrained Rotel tomatoes, sour cream, and milk.
  • Mix well until all ingredients are combined.
  • Pour the mixture into a greased casserole dish.
  • Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.
  • Let it cool for a few minutes before serving.

Notes

Serve hot out of the oven with a side of fresh guacamole and tortilla chips. This casserole can be stored in the fridge for up to three days or frozen for up to three months. Reheat in the microwave or oven until warmed through.
