  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons lime juice
  • 1/2 teaspoon chili powder Adjust according to spice preference.

Preparation

  • In a large bowl, mix the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  • Stir in the corn, feta cheese, and cilantro until well combined.
  • Serve the Mexican street corn as a dip with chips or enjoy it on its own.
  • Optionally, sprinkle more chili powder or cheese on top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Stir well before serving again. For a smoky flavor, grill the corn before mixing.
