  • 1 cup lard or unsalted butter, softened Either works great, but butter gives a richer flavor.
  • 3/4 cup granulated sugar
  • 1 large egg For richness.
  • 3 cups all-purpose flour Can substitute with spelt flour for a nutty twist.
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground anise
  • Pinch salt
  • to taste tablespoons granulated sugar for coating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the lard or butter with the granulated sugar until it’s light and fluffy.
  3. Beat in the egg until it’s well combined.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, anise, and salt.
  5. Gradually stir the dry ingredients into the wet mixture until a soft dough forms.
  6. Roll out the dough on a lightly floured surface to about 1/4 inch thick.
  7. Use cookie cutters to cut the dough into desired shapes.
  8. Place the cut cookies on baking sheets and sprinkle them with granulated sugar.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on wire racks before serving.

Notes

These cookies are delightful with hot chocolate or spiced cider. They can be beautifully packaged for gifts.
