Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, and minced garlic. Mix until well combined.
  • Transfer the mixture to a loaf pan and shape it into a loaf.

Baking

  • Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and no longer pink in the center.
  • Let it rest for a few minutes before slicing and serving.

Notes

Serve with creamy mashed potatoes and steamed green beans, or a fresh salad with a zesty vinaigrette. Store leftovers wrapped tightly; best used within four days in the refrigerator or within three months if frozen. For an extra crispy top, broil the meatloaf for the last 5 minutes of cooking.
