  • 2 cups cantaloupe or honeydew melon, balled or cubed Use ripe melon for best sweetness.
  • 1 cup cucumber, thinly sliced or diced
  • 2 tablespoons fresh mint, chopped Fresh mint is key for vibrant flavor.
  • 1 tablespoon lime juice Can be substituted with lemon juice.
  • 1 teaspoon honey Optional for added sweetness.
  • 1 pinch salt
  • to taste freshly ground black pepper

Preparation

  • In a large bowl, combine the melon, cucumber, and chopped mint.
  • In a small bowl, whisk together the lime juice, honey (if using), salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Chill for 10-15 minutes before serving for the best flavor.
  • Serve cold.

Notes

Store leftovers in an airtight container in the refrigerator for 1-2 days. Stir before serving as dressing may settle. Feel free to add other fruits, nuts, or thinly sliced red onion for extra texture.
