  • 1/2 cup crumbled feta cheese For a tangy twist, you can swap with goat cheese.
  • 1/4 cup all-purpose flour Can substitute with almond flour for a gluten-free option.
  • 1/4 cup grated Parmesan cheese Can substitute with nutritional yeast for vegan option.
  • 2 large eggs, beaten
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • to taste Salt and pepper

Preparation
  1. Preheat the oven to 375°F (190°C) and spray a baking sheet with olive oil.
  2. In a mixing bowl, combine the chopped spinach, crumbled feta, all-purpose flour, grated Parmesan, beaten eggs, garlic powder, dried oregano, salt, and pepper. Mix until well integrated.
  3. Drop spoonfuls of the mixture onto the prepared baking sheet, allowing space between each one.
Baking
  1. Bake for approximately 10-12 minutes, or until the crisps are golden brown and firm to the touch.
  2. Let them cool for a few minutes before serving.

Notes

Pair these crisps with tzatziki or a fresh cucumber salad for an elevated experience. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a preheated oven at 350°F (175°C) for about 5-7 minutes.
