Ingredients
  

For the Meatloaf
  • 1.5 lbs ground beef Use lean ground beef for less greasiness.
  • 1 cup breadcrumbs Whole wheat breadcrumbs or oats can be used as a substitute.
  • 1 egg
  • 0.5 cup onion, finely chopped
  • 0.5 cup milk
  • to taste salt
  • to taste pepper
  • to taste garlic powder
For the Mashed Potatoes
  • 6 potatoes, peeled and cubed
  • 4 tbsp butter
  • 0.5 cup milk For a creamier texture, use a potato ricer.
For the Gravy
  • 2 cups beef broth
  • 2 tbsp flour Whisk into broth to thicken.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine ground beef, breadcrumbs, egg, chopped onion, milk, salt, pepper, and garlic powder. Mix well and form into a loaf.
Baking
  1. Place meatloaf in a baking dish and bake for about 1 hour until cooked through.
Mashed Potatoes
  1. Meanwhile, boil cubed potatoes in salted water until tender. Drain and mash with butter and milk until creamy.
Gravy Preparation
  1. In a saucepan, heat beef broth and whisk in flour until combined, allowing it to cook and thicken into gravy.
Serving
  1. Serve the meatloaf with fluffy mashed potatoes and rich gravy drizzled on top.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Freeze meatloaf and gravy for up to 3 months. Thaw overnight before reheating.
