Ingredients
  

For the Salmon

  • 4 fillets 4 salmon fillets (6 oz each, skinless or with skin)
  • 2 tablespoons 2 tablespoons olive oil
  • 1 teaspoon 1 teaspoon garlic powder
  • 1 teaspoon 1 teaspoon onion powder
  • 1/2 teaspoon 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the Sauce

  • 2 tablespoons 2 tablespoons unsalted butter
  • 3-4 cloves 3 to 4 garlic cloves, minced
  • 1 cup 1 cup heavy cream
  • 1/3 cup 1/3 cup chicken broth (or vegetable broth)
  • 1/2 cup 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon 1/2 teaspoon chili flakes (optional)
  • 1/2 cup 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon 1 teaspoon dried basil or Italian seasoning
  • 1/2 cup 1/2 cup fresh spinach, chopped

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large oven-proof skillet, heat the olive oil over medium heat.
  • Season the salmon fillets with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Add the salmon to the skillet and sear for about 3-4 minutes on each side until golden. Remove from skillet and set aside.

Cooking the Sauce

  • In the same skillet, add the butter and minced garlic, and sauté until fragrant (about 1 minute).
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring to a low simmer.
  • Add the Parmesan cheese, chili flakes, sun-dried tomatoes, basil, and spinach. Stir well and cook until the sauce thickens slightly.
  • Place the salmon back into the skillet, spooning some sauce on top.
  • Transfer the skillet to the oven and bake for about 10-15 minutes, or until the salmon is cooked through.

Serving

  • Serve warm, drizzled with the creamy sauce.

Notes

Best served immediately with a side of roasted vegetables or a simple green salad. The sauce pairs well with rice or pasta.
