  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1/2 cup maraschino cherry juice
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 3/4 cup chopped maraschino cherries

Frosting Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3 cups powdered sugar
  • 2-3 tablespoons maraschino cherry juice for frosting
  • 1/2 teaspoon vanilla extract for frosting
  • 12 pieces whole maraschino cherries for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish to prevent sticking.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside.
  • In a large bowl, cream together the softened butter and granulated sugar until the mixture feels light and fluffy.
  • Add the eggs one at a time, making sure to beat well after each addition.
  • Stir in the sour cream, milk, cherry juice, almond extract, and vanilla extract until everything is well mixed.
  • Gradually mix in the dry ingredients until just combined. Be careful not to overmix!
  • Fold in the chopped maraschino cherries gently to avoid breaking them too much.

Baking

  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely in the pan.

Frosting Preparation

  • While cooling, prepare the frosting by beating the butter and cream cheese together until smooth.
  • Add the powdered sugar, cherry juice, and vanilla extract; beat until fluffy and creamy.
  • Once the cake is cool, spread the frosting on top and add a whole maraschino cherry to each piece.
  • Chill the cake for 30 minutes before slicing for clean cuts.

Notes

To keep your Maraschino Cherry Cake fresh, store it in an airtight container in the refrigerator for about 4 to 5 days. For longer storage, freeze it for up to 3 months, wrapped tightly.
