Ingredients
  

Dry Ingredients

  • 2 cups old-fashioned (rolled) oats Great source of fiber
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder Helps the oatmeal rise
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Wet Ingredients

  • 2 cups milk of choice Can use dairy, almond, soy, or coconut milk
  • 1 large egg
  • 3 tablespoons coconut oil, melted Can substitute with butter or another oil
  • 1/4 cup pure maple syrup Adds natural sweetness

Instructions
 

Preparation

  • Preheat the oven to 350 degrees F.
  • Grease an 8x8 square baking dish and set aside.
  • In a medium bowl, whisk together the oats, brown sugar, baking powder, salt, and cinnamon.
  • In another medium bowl, whisk together the milk, egg, coconut oil, and maple syrup.
  • Pour the oat mixture evenly into the baking pan.
  • Pour the milk mixture slowly over the oats and gently shake the pan to ensure even coverage.

Baking

  • Bake for 40 minutes, until the top is golden and oatmeal is set.
  • Let cool for 5 minutes before serving warm, topped with berries, nuts, nut butter, or additional maple syrup.

Notes

Store any leftovers in the refrigerator for up to a week. Reheat in the microwave or oven. For longer storage, freeze in airtight containers for up to three months.
