Ingredients
  

Chicken and Marinade

  • 4 pieces chicken breasts
  • 2 tablespoons lime juice Additional lime juice can be added to the salsa.
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Salsa

  • 1 piece ripe mango, diced Choose a ripe mango for the best sweetness.
  • 1 piece red onion, finely chopped
  • 1 piece jalapeño, seeded and minced More jalapeños can be added for extra heat.
  • Fresh cilantro for garnish

Preparation

  • In a bowl, combine olive oil, lime juice, smoked paprika, salt, and pepper. Marinate the chicken breasts in the mixture for at least 30 minutes.

Cooking

  • Preheat the grill or oven to medium-high heat.
  • Cook the marinated chicken for about 7-8 minutes per side until fully cooked.

Salsa Preparation

  • In another bowl, mix the diced mango, red onion, jalapeño, and additional lime juice to make the salsa.

Serving

  • Once the chicken is cooked, top with the mango salsa and garnish with fresh cilantro. Serve immediately.
