  • 1 cup diced red bell pepper Adds color and sweetness.
  • 1/2 cup sliced green onions Optional garnish.

Preparation

  • Cook elbow macaroni according to package instructions until al dente. Drain and rinse under cold water.
  • In a large bowl, combine mayonnaise and Dijon mustard; mix until smooth.
  • Add chopped celery, diced red bell pepper, and sliced green onions to the dressing.
  • Fold in the cooled macaroni until evenly coated.
  • Season with salt and pepper; mix well.
  • Cover and refrigerate for at least one hour before serving.

Notes

Rinse the macaroni after cooking to stop the cooking process and prevent mushiness. Feel free to add more vegetables like peas or carrots. You can also enhance flavor with chopped hard-boiled eggs or herbs.
