  • 0.5 cups Heavy Cream Used in batter for richness.

Toppings

  • 2 cups Fresh Strawberries The star ingredient; use ripe, juicy berries.
  • 1 cup Heavy Cream For whipped topping; can add powdered erythritol for sweetness.

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper.
  • In a large mixing bowl, whisk together almond flour, granular sweetener, and baking powder.
  • In a separate bowl, beat together eggs and heavy cream until combined. Gradually stir this mixture into the dry ingredients until a smooth batter forms.
  • Pour the batter into your prepared cake pan and bake for about 25-30 minutes or until a toothpick comes out clean. Let it cool completely in the pan before transferring it to a wire rack.
  • While the cake cools, slice the fresh strawberries. Toss them with a sprinkle of sweetener to enhance their natural sweetness.
  • In a chilled bowl, whip heavy cream until it forms soft peaks. Optionally, add a tablespoon of powdered erythritol while whipping.
  • Once the cake is completely cooled, slice it in half horizontally. Layer the bottom half with strawberries and half of the whipped cream, then place the top half of the cake back on and repeat with remaining strawberries and whipped cream.
  • Slice and serve your Low Carb Keto Strawberry Shortcake chilled, ideally after letting it sit in the refrigerator for a little while for the flavors to meld.

Notes

Store leftovers in the refrigerator. You can substitute strawberries with other berries like raspberries or blueberries for a different flavor.
