Ingredients
  

For the Filling

  • 8 oz Cream cheese Softened; can substitute with Greek yogurt for a lighter version.
  • 1/4 cup Sweetener (stevia or erythritol) Adjust to taste; honey or maple syrup can be used but increase carb content.
  • 2 tbsp Cinnamon Essential for flavor.

For the Rolls

  • 6 large Low-carb tortillas Almond or coconut flour tortillas preferred for flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine the softened cream cheese, sweetener, and cinnamon until smooth to create the filling.
  • Lay the low-carb tortillas flat and evenly spread the cream cheese mixture over each tortilla, leaving a small border around the edges.
  • Gently roll each tortilla from the bottom up to create a log shape and slice into bite-sized pieces, about 1-inch thick.
  • Place the rolls in a greased baking dish, standing on their sides, snug but not overcrowded.
  • Bake for 20-25 minutes until golden brown and the filling is bubbly.
  • For an optional glaze, mix powdered erythritol with a splash of almond milk and drizzle over the warm rolls.

Notes

Let the cream cheese soften completely for a smooth filling. Feel free to experiment with add-ins like chopped nuts or dark chocolate chips.
