  • 1 lb ground Italian sausage
  • 1 cup bell peppers, sliced use a mix of red, yellow, green
  • 1 cup mushrooms, sliced
  • 1 cup sugar-free marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup black olives, sliced
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes optional
  • Fresh basil for garnish

Preparation

  • Preheat Oven to 400°F (200°C).
  • In a skillet over medium heat, cook the Italian sausage until browned and cooked through; drain excess grease if needed.
  • Add bell peppers and mushrooms to the pan with the sausage and cook for 3–5 minutes until just tender.

Assembly and Baking

  • In oven-safe bowls or ramekins, layer the sausage and veggie mixture, then spoon marinara sauce over the top.
  • Sprinkle with Italian seasoning and red pepper flakes (if using).
  • Top with mozzarella cheese and black olives.
  • Place bowls on a baking sheet and bake for 10–15 minutes, or until cheese is melted and bubbly.
  • Broil for an extra 1–2 minutes for golden brown tops (optional).
  • Top with fresh basil, let cool slightly, and serve.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving again. Tips include using turkey sausage for a leaner option and swapping in other vegetables like spinach or zucchini.
