Ingredients
  

For the Cake

  • 2 cups almond flour This gives the cake structure without the carbohydrates of traditional flour.
  • 1 tablespoon baking powder To provide lift to the cake.
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon Spices that add warmth.
  • 4 large eggs These bind the ingredients.
  • 1 cup cream cheese Adds moistness and richness.
  • 1 cup low-carb sweetener Use erythritol or monk fruit.

For the Cinnamon Swirl

  • 3 tablespoons melted butter
  • 2 tablespoons cinnamon
  • 4 tablespoons low-carb sweetener

For the Frosting (optional)

  • 4 ounces softened cream cheese
  • 1/4 cup butter Softened.
  • 1/2 cup low-carb sweetener Use to taste.

Preparation

  • Preheat your oven to 350°F (175°C). Prepare an 8-inch round cake pan with cooking spray or parchment paper.
  • In a large bowl, combine almond flour, baking powder, salt, nutmeg, and cinnamon. In another bowl, whisk the eggs, cream cheese, and sweetener until smooth. Slowly add the dry ingredients to the wet ingredients and mix until just combined.

Cinnamon Swirl

  • In a small bowl, mix melted butter, cinnamon, and sweetener.

Layering and Baking

  • Pour half of the batter into the prepared pan, then half of the cinnamon mixture. Use a knife to swirl it gently. Add the remaining batter and top with the last of the cinnamon mixture, using the knife again to create swirls.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Frosting and Serving

  • While the cake cools, prepare the frosting by mixing softened cream cheese, butter, and sweetener. Spread over the cooled cake. Slice and serve warm.

Notes

For substitutions, you can use coconut flour instead of almond flour, but adjust the liquid as coconut flour absorbs more moisture. Greek yogurt can replace cream cheese for a lighter option.
