  • 2 cans 14.5 oz. cans chicken broth
  • 2-3 large carrots, peeled and diced
  • 4 medium potatoes, peeled and cubed
  • 1 tsp onion powder
  • 2 small heads broccoli, washed and diced small
  • 3 Tbsp butter Can be substituted with olive oil for a dairy-free version.

  • In a large pot, melt the butter over medium heat.
  • Add the diced carrots and cook until softened, about 5 minutes.
  • Add the potatoes, chicken broth, and onion powder. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  • Stir in the diced broccoli and cook for an additional 5 minutes.
  • Use an immersion blender to puree the soup to your desired consistency or leave it chunky.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

This soup pairs well with crusty bread, light salad, or grilled cheese sandwiches. Top with shredded cheese, crispy bacon, or a dollop of sour cream for added flavor. Store in the fridge for up to three days or freeze for about three months. Thaw overnight before reheating.
