  • 4 large large bell peppers Any color of bell peppers can be used.
  • 1 lb ground beef Can substitute with ground turkey for a leaner option.
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 cup shredded cheddar cheese Feel free to use your favorite cheese.
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet over medium heat, brown the ground beef until fully cooked.
  4. Add the diced onion and minced garlic, cooking until softened and fragrant.
Assembly
  1. Stir in the ketchup, mustard, salt, and pepper to season the mixture.
  2. Take the skillet off the heat and fold in half of the shredded cheese and half of the crumbled bacon.
  3. Spoon the beef mixture into each bell pepper, placing them in a baking dish.
  4. Top each stuffed pepper with the remaining cheese and bacon.
Baking
  1. Cover the dish with foil and bake for 25-30 minutes, until the peppers are tender.
  2. Remove the foil and bake for an additional 5 minutes, allowing the cheese to melt.
  3. Serve the Loaded Bacon Cheeseburger Stuffed Peppers hot and enjoy!

Notes

Feel free to customize the filling with additional toppings like jalapeños for a kick. Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 3 months.
