Preparation
  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Stir in the lemon zest, lemon juice, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually incorporate the flour mixture into the creamed butter mixture, stirring until a soft dough forms.
  6. Roll the dough into 1-inch balls and arrange them on the prepared baking sheet, keeping about 2 inches apart.
  7. Gently flatten each ball using the palm of your hand or the bottom of a glass.
Baking
  1. Bake for 15-18 minutes or until the edges turn just golden.
  2. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  3. Dust the cookies generously with additional powdered sugar when cool.
