  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice Use fresh lemon juice for the best flavor.
  • 1/4 cup unsalted butter Stir in butter immediately after cooking.
  • Zest of 2 lemons Add zest for enhanced flavor.
  • 1 pinch salt

Cooking

  • In a saucepan, combine sugar, eggs, lemon juice, lemon zest, and salt. Whisk until smooth.
  • Cook over medium heat, stirring constantly, until thickened and starts to bubble.
  • Remove from heat and immediately stir in butter until melted.
  • Strain through a fine mesh sieve into a jar.
  • Let cool before covering and refrigerating. Use as desired.

Notes

Lemon Curd can be stored in the refrigerator for up to two weeks. For longer storage, freeze in small portions for up to three months. Whisk continuously while cooking to prevent the eggs from scrambling.
