  • 4 fillets Cod fillets Fresh is best, but frozen works too
  • 1/4 cup Butter Unsalted for better flavor control
  • 1 tablespoon Fresh lemon juice Brightens up the dish
  • 2 cloves Garlic Fresh is preferred for a strong flavor
  • 2 tablespoons Fresh herbs Parsley, dill, or thyme complement nicely
  • to taste Salt and pepper Optional spices like paprika or cayenne for added kick

Preparation

  • Preheat the oven to 400°F (200°C).
  • Lightly grease a baking dish with butter or olive oil.
  • In a small saucepan, melt the butter over low heat. Once melted, add minced garlic and sauté for about a minute until fragrant.
  • Remove from heat and stir in fresh lemon juice and chopped herbs. Season with salt and pepper.
  • Lay the cod fillets in your prepared baking dish and pour the lemon butter mixture over the top.
  • Bake for 12-15 minutes or until the fish is opaque and flakes easily with a fork.
  • Let the cod rest for a minute before serving.

Notes

For added flavor, consider incorporating lemon zest into the butter mixture. Pair with sautéed greens or a fresh salad.
