Cobbler Batter

  • 1 cup All-purpose flour You can use whole wheat for a healthier alternative

  • 1 cup Milk Almond or coconut milk works too
  • 1/4 cup Brown sugar For added depth of flavor

Preparation

  • Preheat the oven to 350°F (175°C).
  • Prepare the fruit: If using fresh peaches, slice them thinly, removing pits. If using canned, drain and pat dry.
  • Mix the filling: In a large mixing bowl, stir together the sliced peaches, granulated sugar, and cinnamon. Let them sit for about 10 minutes to release their juices.
  • Make the batter: In a separate bowl, whisk together the flour, baking powder, milk, melted butter, and brown sugar until smooth. Add vanilla extract for warmth if desired.
  • Assemble the cobbler: Pour the batter into a greased 8x8 baking dish. Spoon the peach mixture over the batter evenly.
  • Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and bubbly.
  • Cool and serve: Allow the cobbler to cool for a few minutes before serving. It pairs beautifully with a scoop of vanilla ice cream or a dollop of whipped cream!

Notes

For a gourmet twist, add a sprinkle of nutmeg or a splash of bourbon to the peach filling. The cobbler can also be made with frozen peaches if fresh ones are not available.
