  • 8 ounces 8 ounces pasta (such as rotini or penne), cooked, rinsed, and cooled Cook pasta al dente for the best texture.
  • 1 cup 1 cup ranch dressing or Italian dressing Feel free to experiment with different dressings.
  • 1 cup 1 cup cherry tomatoes, halved
  • 1 1 cucumber, diced Add any favorite vegetables you have on hand.
  • 1 1 red bell pepper, diced
  • 1/2 1/2 red onion, thinly sliced

Preparation

  • In a large bowl, layer the cooked pasta as the base.
  • Pour the ranch or Italian dressing over the pasta.
  • Add the cherry tomatoes, cucumber, red bell pepper, and red onion in layers over the dressing and pasta.
  • Serve immediately or chill before serving for a short time.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to three days. Serve cold; do not reheat. Freezing is not recommended as the texture of the vegetables may become mushy.
