Ingredients
  

Pasta and Vegetables
  • 8 ounces pasta (such as rotini or penne), cooked, rinsed, and cooled Ensure pasta is cooled and rinsed.
  • 1 cup ranch dressing or Italian dressing Choose your favorite dressing.
  • 1 cup cherry tomatoes, halved Fresh and ripe tomatoes recommended.
  • 1 medium cucumber, diced Peel if desired for a different texture.
  • 1 medium red bell pepper, diced Add color and sweetness.
  • 1/2 medium red onion, thinly sliced Can substitute with green onions for a milder flavor.

Method
 

Preparation
  1. In a large bowl, add the cooled pasta.
  2. Layer the cherry tomatoes, cucumber, red bell pepper, and red onion on top of the pasta.
  3. Drizzle the dressing over the salad.
  4. Toss gently to combine all the ingredients.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

Store leftovers in an airtight container for up to three days. For long-term storage, freeze the pasta without dressing for up to a month.
