Main Ingredients
  • 1 lb Italian sausage, crumbled can substitute turkey sausage for a lighter version
  • 4 cups chicken or vegetable broth base of the soup
  • 1 can canned diced tomatoes
  • 2 cups water to adjust the consistency
  • 8 oz lasagna noodles, broken into pieces ensures even cooking
Toppings
  • 1 cup ricotta cheese for creaminess
  • 1 cup mozzarella cheese, shredded for melting on top
  • to taste fresh basil, for garnish adds freshness

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until onion is translucent.
  2. Add crumbled Italian sausage and cook until browned.
  3. Pour in chicken or vegetable broth, diced tomatoes, and water. Bring to a boil.
  4. Stir in the broken lasagna noodles and Italian seasoning. Reduce heat and simmer until noodles are tender.
  5. Season with salt and pepper to taste.
  6. Serve in bowls topped with a dollop of ricotta cheese, shredded mozzarella, and fresh basil.

Notes

Lasagna Soup pairs well with a green salad or crusty garlic bread. For a spicy kick, use spicy Italian sausage or add red pepper flakes. Customize with your favorite vegetables like spinach or zucchini.
