KFC Copycat Coleslaw

Ingredients
  

Main ingredients

  • ½ head ½ head of cabbage, finely chopped (about 4 cups)
  • ½ medium ½ medium carrot, finely chopped

Dressing ingredients

  • 2 tbsp 2 tbsp buttermilk
  • tsp 4¼ tsp white vinegar
  • tbsp 1½ tbsp onion, finely chopped
  • 2 tbsp 2 tbsp whole milk
  • ¼ cup ¼ cup mayonnaise
  • 2 tsp 2 tsp lemon juice
  • 4 tsp 4 tsp sugar
  • ¼ tsp ¼ tsp salt
  • tsp ⅛ tsp pepper

Preparation

  • Using a food processor, chop the cabbage, pulsing until finely chopped, working in small batches to avoid pulverizing it.
  • Do the same with the carrot and place both in a medium bowl.

Mixing Dressing

  • In a separate small bowl, combine the remaining ingredients and mix until smooth.
  • Pour this mixture over the cabbage and carrot. Stir well, allowing the moisture from the cabbage to blend with the dressing.

Chilling

  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

Best served chilled. Great as a side for fried chicken, or as a topping for tacos or pulled pork. For a crunchier texture, chop the cabbage and carrot by hand. Adjust the sugar for sweetness, and increase vinegar or lemon juice for tanginess.
