  • 1 cup peanut butter (creamy and natural) Use natural peanut butter with no added sugar or oils for the best results.
  • ½ cup granulated sweetener (such as monk fruit sweetener or erythritol) Adjust the sweetness according to your personal taste.
  • ½ cup almond flour Add more if the dough is too sticky.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the peanut butter, granulated sweetener, and almond flour. Mix until you have a soft dough.
  • If the dough is too crumbly, stir in more peanut butter. If it’s too sticky, add more almond flour.
  • Scoop out about a tablespoon of dough and roll it into a ball. Place the balls on the baking sheet and flatten them with a fork.

Baking

  • Bake the cookies in the oven for 8 to 12 minutes until golden brown on the edges.
  • Let them cool on the baking sheet for at least 20 minutes before serving.

Notes

To store, keep in an airtight container at room temperature for up to a week or freeze for up to three months. Separate layers with parchment paper to prevent sticking.
