  • 1 teaspoon lemon juice Enhances the flavor.
  • a pinch salt Balancing flavor.

Crispy Topping

  • more as needed powdered erythritol For torching on top.

Preparation

  • Preheat your oven to 325°F (163°C) and grease the bottom of a springform pan with butter.
  • In a large mixing bowl, beat the cream cheese until creamy. Gradually add in the powdered erythritol, mixing until smooth.
  • Beat in the eggs, one at a time, ensuring they are fully incorporated before adding the next. Stir in the heavy cream, vanilla extract, lemon juice, and a pinch of salt.
  • Prepare a water bath by placing the springform pan into a larger baking dish filled with about an inch of hot water.

Baking

  • Pour the cheesecake mixture into the prepared springform pan and bake for about 50-60 minutes, until the edges are firm and the center has just a slight jiggle.
  • After baking, turn off the oven and crack the door slightly. Let the cheesecake cool in the oven for an hour before transferring it to the fridge. Chill for at least 4 hours, or overnight for the best texture.

Finishing Touch

  • Once chilled, remove the cheesecake from the pan and sprinkle an even layer of powdered erythritol on top.
  • Use a kitchen torch to carefully caramelize the sugar until it forms a crispy, golden crust.
  • Allow the cheesecake to sit for a few minutes to let the topping harden. Slice and enjoy!
