Ingredients
  

For the dough

  • 2 cups Almond flour Provides the base for the dough.

For the filling

  • 1/4 cup Butter, softened Mixed with cinnamon and sweetener.
  • 2 tbsp Cinnamon Provides the classic cinnamon flavor.
  • 1/4 cup Erythritol or monk fruit sweetener For sweetness without the carbs.

For the glaze

  • 2 tbsp Cream cheese Whisked with butter and sweetener.
  • 1 tbsp Butter For a rich glaze.
  • 1 tbsp Erythritol or monk fruit sweetener Sweetener for the glaze.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Prepare a baking dish by greasing it lightly.
  • In a mixing bowl, combine the almond flour, coconut flour, and baking powder. Stir well until mixed evenly.
  • In another bowl, beat the eggs, melted cream cheese, and melted butter together until you achieve a smooth consistency.
  • Gradually combine the wet and dry ingredients, mixing until a soft dough forms. If the dough feels too sticky, don’t hesitate to add a touch more almond flour.
  • Roll out the dough between two parchment sheets to avoid stickiness, shaping it into a rectangle about ½ inch thick.
  • Prepare the filling by mixing softened butter with cinnamon and your chosen sweetener. Spread this mixture evenly over the rolled-out dough.
  • Carefully roll the dough into a log shape, ensuring a tight roll to maintain that lovely swirl.
  • Slice the roll into 12 equal pieces and place them in the greased baking dish, leaving a little space between each for rising.

Baking

  • Bake in the preheated oven for 20-25 minutes until golden brown on top.
  • Create a glaze with cream cheese, butter, and a touch of sweetener whisked together until smooth, and drizzle it over your warm rolls.

Notes

For an extra flavor boost, consider adding chopped nuts or dark chocolate chips to the filling. Trust your instincts—if your dough feels off, adjust with a little more almond flour until you find the right balance.
