Ingredients
  

Main Ingredients

  • 3 pounds chicken breast, boneless skinless
  • 8 ounces cream cheese Cut into cubes
  • 3 tablespoons ranch dressing mix Use a good quality mix for best flavor
  • 1 cup cheddar cheese, shredded Divided for topping
  • 2 slices bacon, cooked and crumbled

Garnish

  • 2 pieces green onions, finely chopped Reserve some for garnish

Instructions
 

Preparation

  • Finely chop the green onions and set them aside.
  • Add the chicken breast to the crockpot and season with salt and black pepper.
  • Cut the cream cheese into cubes and spread it evenly over the chicken.
  • Sprinkle the ranch dressing mix and most of the green onions on top, saving some for garnish later.
  • Lastly, sprinkle half of the cheddar cheese on top.

Cooking

  • Cover and cook on high for 3-4 hours or on low for 6-8 hours.
  • Once the chicken is fork-tender, shred it in the crockpot using two large forks and mix everything together.
  • Cook for an additional 10 minutes.
  • Finally, sprinkle the remaining cheese, green onions, and crumbled bacon on top.
  • Cover for a minute or two to let the cheese melt before serving.

Notes

Serve on its own, over cauliflower rice, or in low-carb buns or tortillas. For extra flavor, add herbs or spices to taste. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage.
