  • 8 oz Cream cheese Make sure it's at room temperature.
  • 1 cup Almond flour Can substitute with coconut flour, but use less.
  • 1/2 cup Sweetener (Erythritol or Stevia) Choose your preferred sugar substitute.
  • 2 large Eggs Room temperature for best mixing.
  • 1 tsp Vanilla extract Adds flavor.

  • to taste Fresh berries Strawberries or raspberries work well.
  • to taste Crushed nuts Adds texture.

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with silicone liners or parchment paper.
  • Blend the cream cheese in a mixing bowl until smooth. Add your sweetener, eggs, and vanilla extract, mixing until you achieve a creamy consistency.
  • Fold in the almond flour until just combined. Avoid overmixing, as you want to keep the texture smooth.
  • Spoon the mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
  • Bake for 15-18 minutes or until the edges are set and the center is slightly jiggly. Let them cool in the pan for a few minutes and then transfer them to a wire rack to cool completely.
  • Before serving, chill them in the fridge for at least an hour to enhance the flavor.
  • Optional: Top with a drizzle of sugar-free chocolate or a sprinkle of crushed nuts for added texture.

Notes

Make sure all ingredients are at room temperature before mixing for the best texture. Keep a close eye on the baking time to avoid dry bites.
