Main Ingredients

  • 4 pieces bell peppers Choose brightly colored for a nice presentation.
  • 1 pound ground chicken Can substitute with ground turkey or beef.
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese Feel free to use different types of cheese.
  • to taste Salt and pepper
  • 2 tablespoons Olive oil For cooking the chicken.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds.

Cooking

  • In a skillet, heat olive oil over medium heat. Add the ground chicken and cook until browned.
  • Stir in the diced tomatoes, cooked rice, Italian seasoning, salt, and pepper.
  • Fill each bell pepper with the chicken mixture and top with shredded cheese.
  • Place the stuffed peppers in a baking dish and cover with foil.
  • Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
  • Serve warm.

Notes

If storing leftovers, keep them in an airtight container in the fridge for up to three days, or freeze unbaked peppers for up to three months.
