For the Soup Base

  • 1 tablespoon olive oil For sautéing
  • 1 cup onion, chopped For flavor

For the Soup

  • 2 cups chicken or beef broth Base of the soup
  • 15 oz crushed tomatoes, canned For depth of flavor
  • 2 teaspoons Italian seasoning For seasoning

  • 8 pieces lasagna noodles, broken Use broken pieces for a rustic feel
  • 1 cup ricotta cheese Adds creaminess
  • 1 cup shredded mozzarella cheese For topping and mixing

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, and sauté until soft.
  • Add ground beef or sausage, and cook until browned.
  • Pour in the broth, crushed tomatoes, and Italian seasoning. Season with salt and pepper.
  • Bring to a boil, then reduce heat and add broken lasagna noodles. Simmer until noodles are tender, about 10-12 minutes.
  • Stir in the ricotta and half of the mozzarella cheese. Mix until combined and heated through.
  • Serve hot, topped with the remaining mozzarella cheese and fresh basil.

Notes

Feel free to add vegetables like spinach or bell peppers for added nutrition. Adjust the seasoning to your taste.
