  • 1 tablespoon olive oil
  • 1 lb Italian sausage
  • 1 teaspoon salt
  • to taste Freshly ground pepper
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup yellow bell pepper, chopped
  • 8 oz rice noodles
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon chili paste
  • 2 green onions chopped For garnish

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add Italian sausage and cook until browned, breaking it apart as it cooks.
  • Season with salt and freshly ground pepper.
  • Stir in the minced garlic, red bell peppers, and yellow bell peppers. Cook until the peppers are soft.
  • Meanwhile, cook the rice noodles according to package instructions.
  • Once cooked, drain the noodles and add them to the skillet.
  • Pour in soy sauce, oyster sauce, and chili paste. Toss everything together until the noodles are well coated and heated through.
  • Garnish with chopped green onions and serve warm.

Notes

This dish is best served warm and pairs nicely with a side of crusty bread or a simple salad. Store leftovers in an airtight container in the fridge for 3 to 4 days. Reheat by microwaving, adding a splash of water if the noodles seem dry.
