  • 2/3 cup evaporated milk
  • 3.4 ounces instant butterscotch pudding mix
  • 3 1/2 cups quick oats Can substitute with rolled oats for a different texture.

Preparation

  • In a saucepan, combine the granulated sugar, butter, and evaporated milk.
  • Bring the mixture to a boil over medium heat, stirring constantly.
  • Once boiling, let it cook for 2-3 minutes without stirring.
  • Remove from heat and whisk in the instant pudding mix until smooth.
  • Stir in the quick oats until well combined.
  • Drop spoonfuls of the mixture onto wax paper and let them cool until set.

Notes

For an extra touch, drizzle melted chocolate or caramel over the cookies. Ensure to store them in an airtight container to keep them fresh. Can be frozen, just layer them with parchment paper.
