  • 6 pieces boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 pieces limes, juice and zest
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon smoked paprika
  • to taste Salt and black pepper
  • for garnish Fresh cilantro (optional)

Instructions
 

Preparation

  • In a small bowl, whisk together olive oil, lime juice and zest, honey, minced garlic, soy sauce, smoked paprika, salt, and black pepper to create the marinade.
  • Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them.
  • Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for a stronger flavor.

Cooking

  • Preheat a grill or skillet over medium-high heat.
  • Remove the chicken from the marinade and cook for 5–6 minutes on each side until golden brown and fully cooked (the internal temperature should reach 165°F/74°C).
  • Let the chicken rest for 5 minutes before serving.
  • Garnish with chopped fresh cilantro if desired.

Notes

For even more flavor, marinate the chicken longer. Adjust honey and lime to your taste. Grilling adds a nice smoky flavor.
