  • 6 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 limes (juice and zest)
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions
 

Preparation

  • In a small bowl, whisk together olive oil, lime juice and zest, honey, garlic, soy sauce, paprika, salt, and pepper.
  • Place chicken thighs in a resealable bag or shallow dish and pour the marinade over them.
  • Marinate in the fridge for at least 30 minutes, or up to 4 hours.

Cooking

  • Preheat a grill or skillet over medium-high heat.
  • Remove chicken from marinade and cook for 5–6 minutes per side, or until golden and cooked through (internal temp should reach 165°F/74°C).
  • Let rest for 5 minutes before serving.
  • Garnish with chopped fresh cilantro if desired.

Notes

Serve on a platter with any remaining marinade drizzled over the top. Pairs well with rice, quinoa, a fresh salad, or grilled vegetables. For extra flavor, marinate longer and ensure cooking surface is hot enough to sear the chicken.
