Ingredients
  

Main Ingredients

  • 1 cup Sugar
  • 1/3 cup Water
  • 1/4 cup Fresh lemon juice
  • 1/2 cup Natural honey Maple syrup can serve as a vegan substitute.

Optional Ingredients

  • 1-2 teaspoons Fresh ginger Grated for a zesty kick.
  • to taste Herbal teas like chamomile or thyme For added soothing flavors.

Preparation

  • Gather all your ingredients and ensure you have a candy thermometer.

Mixing

  • In a medium saucepan, combine a cup of sugar with 1/3 cup of water and bring to a gentle boil over medium heat. Stir occasionally, allowing the sugar to completely dissolve.
  • Once the sugar has dissolved, bring the mixture to a vigorous boil. Add the fresh lemon juice and honey. If using ginger, grate a teaspoon or two into the mix at this stage.

Boiling

  • Continue boiling until it reaches approximately 300°F (hard crack stage) on your candy thermometer, which can take about 10-15 minutes.

Testing & Pouring

  • To test if your mixture is ready, drop a small spoonful into a glass of cold water. If it hardens into a brittle shape, you’re good to go.
  • Lightly grease a baking sheet with oil and carefully pour the mixture onto it, spreading it into your desired thickness.

Cutting & Storing

  • Once cool enough to handle, score the mixture into squares or desired shapes before letting it cool completely.
  • Store your cough drops in an airtight container, layered between parchment paper to prevent sticking.

Notes

Watch the temperature closely to avoid burning or undercooking the mixture. Patience is essential!
