  • ½ cup fresh lemon juice Juice from about 2-3 fresh lemons. Zest the lemons before juicing.
  • 2 inches fresh ginger Peeled and grated. Dried ginger can be used in a pinch.
  • 1 cup water To combine with ingredients.

Preparation

  • Peel and grate about a 2-inch piece of fresh ginger.
  • Juice the lemons until you have about ½ cup of fresh lemon juice, and zest the lemons.

Cooking

  • In a small saucepan, combine grated ginger, lemon juice, honey, and water.
  • Bring to a gentle simmer over medium heat for about 10-15 minutes, stirring occasionally.
  • Do not let it boil vigorously; allow it to thicken slightly while the flavors meld.

Cooling and Storing

  • Remove from heat and let cool. Strain the syrup through a fine sieve or cheesecloth into a clean jar.
  • Store the sealed syrup in the fridge; it will last about 2-3 weeks.

Notes

Ensure to use fresh ingredients for the best flavor. The longer you simmer, the thicker the syrup will become. Avoid overheating to prevent caramelization.
